Lemon Bars Recipe

Filling:
4 lemons, squeezed
1 1/2 cups granulated sugar
4 eggs
1/4 cup flour, all purpose

Crust:
2 cups flour, all purpose
1 cup butter, melted
1/2 cup powdered sugar
1 teaspoon vanilla



  1. Heat oven to 350. 
  2. Mix together crust ingredients and press into casserole dish. (If you want to make tarts, you can use muffin pans, but that's something I haven't tried yet. If you do so, bake the crust for 10 minutes before adding the filling)
  3. Mix together filling and pour over the crust.
  4. Bake for 30 minutes.
  5. Let it cool and settle (about 1-2 hours) before cutting. Refrigerating the lemon bars will make them solid and the crust harder.

Work Week #1: Back to business and happy reports

Commute to work in the wee hours of the morning:

But I'm happy to be working again and in a job I actually like. Some people tell me that my job is boring and not exciting but I disagree. I get to learn about the back end of IT Consulting and I get to take training towards my Project Manager Certification. Yay!

Also, this weekend, I'm moving into a new apartment. It's a sweet little studio in the heart of Capitol Hill, an urban part of Seattle. It's a shorter distance to the buses I need for getting to work, plus it's walking distance from a tea shop and a grocery store. However, the former tenant was messy and gross, so there will be cleaning.
